Scott Brown of the Cadiz Police Department took first and third prizes for a pair of creative recopies. His ranch steak pizza took first prize while sirloin chocolate ice cream took third prize. Gay Ledford’s taco salad earned second prize in the cook-off.
Norma Martin of the Cattleman’s Association said, “Originally the contest was just for the Cattleman’s Association, but we all knew that beef was good, so we opened the event to the entire county.”
10 entries competed for the title of best beef in Trigg County with the tough call made by Trigg County Schools Food Service Director Paula Maddox and her daughter Sarah. They judged on the categories of taste, creativity and appearance.
Brown said that he got the idea for his ice cream from the television program “Iron Chef.” “They made ice cream out of fish, so I figured I could do it with sirloin.”
He said that he cooked the steak before emulsifying it in a blender and adding traditional ice cream ingredients, including chocolate into a freezer. “That required a lot of prep, but it worked out pretty well.”
Martin said that after the judging was through, the staff at the Extension Office would enjoy the fruits of community labor. First prize was $50, and contestants submitted one serving of a dish featuring beef as a key ingredient.
