A new bakery, called J.B.’s Bakery, opened for business on Friday, Dec. 10, and so far business is pretty good, said Sabrina Waterhouse, who works there.

“It’s been constant. As soon as the donuts come out of the deep fryer, they’re out the door,” Waterhouse said. “We’re just kind of trying to see what the customers like and what we need to make more of.”

The bakery is shooting for a grand opening between Christmas and New Year’s Day, but a specific date hasn’t been nailed down yet, said Waterhouse. They are waiting for co-owner Brenda Sprague’s sister Jo Ann Reed, who also co-owns the bakery, to come down from New York, she said.

The bakery serves many types of donuts, bagels and cookies, and also several types of breads, muffins and muffins, said Sprague, who hails from upstate New York and has lived in Cadiz since 2004.

The bakery also serves cupcakes, brownies, fudges, and wedding and other occasion cakes, and they will also serve other breakfast foods and beverages, said Sprague.

“Donuts are our biggest hit right now,” Waterhouse said.

Sprague, a registered nurse for 20 years, said a lot of people have told her that she needs to open a bakery because she has been doing cakes for people for quite a while. She thinks that now is a good time to do exactly that.

Currently the two owners are Sprague and her sister Jo Ann Reed, and the bakery employs her other sister Ruth Gardner her husband Michael Sprague and Waterhouse, her daughter.

“It’s pretty much going to be a family operation,” said Sprague. “And hopefully, we’ll get bigger and be able to employ some people in Trigg County.”
