Genesis cooking will help Rotary Auction during annual event

To raise money for its annual auction, the Cadiz Rotary Club will once again be teaming with Genesis Express to sell Boston butts and barbecued chicken.

Genesis publicity officer George Radford said that every year, Genesis cooks the Boston butts and barbecued chicken. At the Rotary’s auction Friday night fish fry, Genesis treasurer Lennus Redd will hand the Rotary the proceeds they earned.

“We always enjoy working with the Rotary Club,” Radford said. “They help us a lot and they’re in the same business of helping the community as we are.”

Rotary President Jim Wallace said that that the Rotary Club buys the meat and that Genesis takes care of the rest. Last year, the fundraiser brought in about $1,200, he said. The Boston butts, which are the butt end of the pig shoulder, weigh anywhere from 4 and-a-half to six pounds. The Rotary Club buys the meat from a wholesaler in Hopkinsville and Wallace described it as some of the best barbecue in Western Kentucky, especially the way genesis members cook it.

“They barbecue all night,” Wallace said. “They do it the right way. They cook it real slow and tender.”
