“It feels great,” said Holland. “This is only my second year to produce, so am just lucky, I guess.”
Rounding out the winners were Reserve Champion Devin Stewart, his grandfather Pink “Tiny” Guier with third, Jason Oakley in fourth and his father Joe Oakley in fifth, to demonstrate the family traditions of curing country ham.
Also in Saturday’s contest were the youth of the Trigg County 4H Club. Tyler Knight’s ham earned the label of champion, while Ella Fourqurean took the reserve champion award. Elizabeth Torian took third, Amanda Fowler Fourth and Macy Taylor took fifth.
Holland said that he learned the art of salting and smoking by reading a book on hams. “I paid attention to what the old timers did. I built a smokehouse with a salt box and an old fuel tank for my smoking.”
