Plenty of options for your tomatoes

After enjoying fresh tomatoes all summer, it seems a shame to have tomato plants still bearing, with all those green tomatoes in all sizes. So what can you do with them?

You can keep them in one of two ways; first, you can put the ones that have a bit of red color out to ripen slowly. I have stored them on a table in a basement or in the kitchen and they will ripen.

Or you can pull up the whole vine, tomatoes and all, and store in a cool, dry basement by hanging the vine, upside down, on a nail in a rafter. That is my preferred way.

Another way to use those green tomatoes is to cook them. You can make “fried green tomatoes” which many people like or you can make green tomato pie with raisins. Ugh!

The best way, in my opinion, is to make a green tomato relish. In a relish, you can use even the smallest, greenest ones. The following is my grandmother’s recipe which is very old and makes wonderful relish.
