“Pigs were first domesticated by the Chinese in 4900 B.C.,” Booth said. “Europeans followed domesticated pigs in 1500 B.C. Nobody knows for sure how the salt got into curing country hams.”
Booth was the featured speaker at the Monday morning Cadiz-Trigg County Chamber of Commerce Kickoff Breakfast, which officially kicks off the Trigg County Country Ham Festival every year. This year, it was held at the Cadiz Baptist Church Annex. Cadiz Family Restaurant provided the breakfast.
Booth, a Marshall County native, said that picking a country ham is a bit like picking a church. During a brief history lesson, he also said that using salt to cure meat might date back to ancient Egypt, as they used it to embalm the deceased.
